These are made with a thicker batter than pancakes and traditionally are cooked on a griddle or you can use a heavy-based frying pan. Flavourings such as honey, grated lemon rind, mixed spice, grated apple or sultanas can be added. This recipe makes about 20 pancakes.

Ingredients

  • 250 g (8 oz) plain flour
  • Pinch of salt
  • ½ teaspoon

Method

  1. Mix the batter as for pancakes. Heat a griddle or frying pan until hot but not smoking. Grease lightly with oil. Drop 2 or 3 tablespoons batter on to the griddle at a time.
