Scotch Pancakes

These are made with a thicker batter than pancakes and traditionally are cooked on a griddle or you can use a heavy-based frying pan. Flavourings such as honey, grated lemon rind, mixed spice, grated apple or sultanas can be added. This recipe makes about 20 pancakes.


  • 250 g (8 oz) plain flour
  • Pinch of salt
  • ½ teaspoon bicarbonate of soda
  • 1 teaspoon cream of tartar
  • 1 egg
  • 300 ml (½ pint) milk
  • 1 tablespoon caster sugar
  • Oil for greasing


  1. Mix the batter as for pancakes. Heat a griddle or frying pan until hot but not smoking. Grease lightly with oil. Drop 2 or 3 tablespoons batter on to the griddle at a time.

  2. Cook until holes appear on top and the batter has set. Flip the pancakes over and cook the other side for about 1 minute. Remove to a wire rack. Reheat the griddle and repeat with more batter.
