As well as ravioli and tortellini there are numerous other small stuffed pasta shapes you can make just as easily. It’s worth making your own because the pasta is more delicate in texture and the filling can be more varied and personal. Lunette are one of the easiest shapes to make. Just cut out circles of dough and place the stuffing along one side. Moisten the edges with water and press to seal, creating the distinctive half-moon shape.
Cook all fresh stuffed pasta in boiling salted water with a little oil for 5-7 minutes, or until al dente. Dried pasta shapes will take slightly longer to cook. Serve either with a sauce or simply with butter and grated Parmesan cheese.
