A good, rich tomato sauce is essential for pizza toppings. My favourite sauce can quickly be made by mixing in a saucepan 2 tablespoons extra virgin olive oil, 1 finely chopped clove of garlic, 397 g (14 oz) can chopped tomatoes, 2 tablespoons tomato purée, some black pepper and a little salt. Heat the mixture until bubbling strongly, stirring constantly until it is reduced to a thick sauce. Cool before using. Alternatively, make a fresh tomato sauce.
