Pan-Baked Fish


This style of baked fish can be a complete meal if it is cooked with vegetables, or you can just cook the fish in a little wine with olive oil, which effectively bastes the fish.

Cook stuffed whole fish or steaks in this way, but medium-sized steaks should be covered with foil to keep the moisture in. Large fish won’t dry out so they don’t need covering.

Place sliced, skinned tomatoes, mushrooms and thinly sliced onions in a buttered ovenproof dish, and season well. Rub the fish with butter and seasoning and place on top of the vegetables.

  • Add 175 ml (6 fl oz) white wine and 3-4 tablespoons of olive oil and season with salt and pepper. Cover the dish loosely with foil and bake at 180° C, 350°F, Gas Mark 4 for 30–40 minutes for a medium-sized fish. The fish is cooked when the flesh looks opaque and flakes easily when tested with the tip of a knife.
