Foil-Baked Fish

Method

After preparing the fish (right), lay the foil package on a large baking sheet and bake steaks at 150°C, 300°F, Gas Mark 2 for about 15 minutes or until firm to the touch. Bake whole fish at the same oven temperature for 12 minutes per 500 g (1 lb) for fish between 1–2.5kg (2–51b) in weight and 8 minutes per 500 g (1 lb) for fish over 2.5kg (5 lb) in weight. After cooking leave the fish in the foil for a few minutes before serving with the cooking juices.

Generously butter a piece of foil. Dot the fish with butter and seasonings such as herbs and lemon slices. Bring the foil up round the fish, add the juice of 1 lemon and wrap up securely.
