This is simply sweetened and flavoured whipped cream, which can be lightened with a little whisked egg white. Sometimes, 1–2 tablespoons brandy are folded in. Whip whipping or double cream with vanilla sugar, using 2 dessertspoons sugar for each 300 ml (½ pint) cream, or to taste. If you are using double cream, fold in 1 whisked egg white. Use like pastry cream (above), or spoon over puddings or serve with fresh fruit.
