Cheese and Spring Onion Soda Baps

These are so quick to make and are delicious served as soon as they are baked for a light lunch or snack. Just slice in half and sandwich together with soft white cheese and tomatoes or other fillings.


  • 250 g (8 oz) strong wholemeal flour
  • 250 g (8 oz) strong white flour
  • 2 teaspoons bicarbonate of soda
  • 2 teaspoons cream of tartar
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper
  • 250 g (8 oz) strong Cheddar cheese, coarsely grated, plus a little extra for sprinkling over the tops
  • 1 bunch spring onions, trimmed and chopped finely
  • 1 tablespoon wholegrain mustard
  • 300 ml (½ pint) buttermilk or milk
  • A little olive oil


Mix the wholemeal, strong white flour, bicarbonate of soda, cream of tartar, salt and cayenne pepper together in a bowl. Stir in 250 g (8 oz) of the cheese and the finely chopped spring onions. Mix the mustard with the buttermilk and add to the flour mixture, stirring until the dough leaves the sides of the bowl.

Knead the dough briefly on a lightly floured surface. Form into a roll about 10 cm (4 in) in diameter and then cut into 6 pieces. Lay the circles on a greased baking sheet, brush lightly with olive oil and sprinkle with the extra grated cheese. Bake at 200°C, 400°F, Gas Mark 6 for 20-25 minutes. Serve warm.
