Bouillabaisse is a fragrant and delicious fish stew which is traditionally made from Mediterranean rock fish and served with rouille, a pounded chilli and garlic sauce. This anglicised version makes use of the varied fresh fish available to us in Britain.

Bouillabaisse is really a meal in itself so you need only serve fruit or something very light to follow. It is easy to do for entertaining because it can be prepared in advance, except for the final few minutes when the fish is coo
