Method

Pick over the lentils for any stones and rinse in cold water. Heat the olive oil in a large pan, add the onions, garlic and potatoes and stir for several minutes to soften the onions. Add the lentils and stir to coat in the oil, then add the stock and bouquet garni. Cover and simmer for at least 1¼ hours, or until the lentils are soft.
