Socca is a speciality from around the Marseilles area. Pieces of socca, a large savoury pancake made from chick-pea flour, are sold hot at the street markets wrapped in paper. This version makes thinner pancakes which are delicious with tapenade or herbed goat’s cheese.
Sift the two flours together. Add the water and beat until smooth. Add the oil and thyme, and season with salt and pepper. Let the batter stand for 20 minutes.
