A good olive oil dressing poured over steaming-hot boiled potatoes is absolutely delicious. Try it next time you are serving sausages – it is a great combination.

Cook the potatoes in gently boiling water until tender. At the same time, cook the sausages.

Meanwhile make the vinaigrette. Place the vinegar and shallots in a bowl with salt and pepper and whisk in the oil. When the potatoes are cooked, drain, place them in a warm bowl, and break them up slightly with a fork. Toss with the vinaigrette and sprinkle with the parsley.
