Soak the chick-peas for 24 hours in cold water to cover.
Drain the chick-peas and place them in a pan. Cover with fresh cold water and bring to the boil. Boil hard for 10 minutes, reduce the heat, add the bouquet garni and simmer gently for about 2 hours, or until the chick-peas are tender.
