  • 500 g (1 lb) broccoli
  • 2 tablespoons olive oil</


Blanch the broccoli for 8–10 minutes in plenty of boiling salted water. Drain, refresh under cold running water and set aside.

Meanwhile place all the other ingredients in a large frying-pan with the water. Bring to the boil and simmer gently, covered, for 15 minutes. Cut the broccoli into small pieces, add to the pan and cook, uncovered, until most of the liquid has evaporated. Taste f
