This is a delicious and unusual salad from across the north Indian border in Nepal. The Nepalese use nothing but salt, lemon juice and pepper to make Naspati Aur Kheera Ke Salat, but this version of the recipe includes several other ingredients to create a refreshing accompaniment.

Ingredients

  • 7.5 ml/ tsp cumin seeds
  • 3 firm William or Bartlett pears

Method

  1. Preheat a small, heavy pan over a medium heat. Add the cumin seeds and stir for about 1 minute, until they are a shade darker and they release their aroma. Transfer the seeds to a plate and allow to cool.

  2. Peel and core the pears, then cut them into bitesize pieces. Put them into a mixing bowl and sprinkle over the lime juice.
