The people of Punjab have mastered the art of cooking chickpeas and combining them with a fragrant mixture of spices. This dish, Chole, is a true delight and, served garnished with tomato, raw onion, green chilli and mint, makes a sumptuous, balanced and healthy meal.
Heat the oil over a low heat in a heavy pan and add the ginger and garlic; stir-fry for 30 seconds.
Add the sliced onion, increase the heat to medium and fry for 6-7 minutes or until the onion is soft and beginning to colour.
