North India’s most famous lentil dish, Dhal Makhani, is made with black lentils, known as urid dhal. They are available in Indian stores and some large supermarkets. No north Indian wedding banquet or special occasion meal is complete without this fragrant and satisfying dish.

  • 175 g/6 oz/¾ cup whole black lentils (urid dhal)

Method

  1. Wash the lentils in several changes of water and soak them for 3-4 hours, or overnight. Drain well and put them into a heavy pan with 600 ml/1 pint/
