A delicious paste of fresh coriander, tamarind juice, root ginger and chilli is used to marinate the chunks of white fish in this recipe, Hara Masale Ki Machchi, creating a refreshing taste. Any white fish may be used - even flaky fish - as it is coated with gram flour before frying, which helps it retain its shape.
Wash the fish and pat dry with kitchen paper. Cut into 5cm/2in pieces and put them in a large mixing bowl.
