A delicious paste of fresh coriander, tamarind juice, root ginger and chilli is used to marinate the chunks of white fish in this recipe, Hara Masale Ki Machchi, creating a refreshing taste. Any white fish may be used - even flaky fish - as it is coated with gram flour before frying, which helps it retain its shape.

  • 675 g/ lb fillet of white fish
