This type of bread, known as paratha, is traditionally a rich, unleavened bread that can be plain or stuffed. This version, Aloo Paratha, is stuffed with spiced potatoes, and olive oil is used instead of ghee. The wholesome taste of the flour used more than makes up for the absence of ghee or butter.
Put the flour and salt in a bowl and work in the oil with your fingertips. Gradually add the water and mix until a soft dough is formed.
Transfer the dough to a floured surface and knead for 3-4 minutes or until all traces of stickines
