Almonds are very popular throughout northern India, where beautiful almond blossoms appear in the orchards of Kashmir at the onset of spring. In Indian cooking, fresh chutneys such as this tasty almond one, Badam Ki Chutney, are made by simply grinding all the ingredients to a smooth purée.

  1. Soak the almonds in 175 ml/6 fl oz/¾ cup boiling water for 15 minutes.
