This dish, Shahi Tukde, originates from royal cuisine; the word shahi meaning ‘royal’ and tukde meaning ‘pieces’. Like many milk-based desserts, it is traditionally enriched with khoya, which is made by simmering full-fat milk until it is almost solid. As this is so time-consuming, Indian cheese has been used instead.

  • 4 large slices of day-old white bread
  • sunflower or light olive oil, for deep-frying
