This dish, Oying, originates in the scenic mountain state of Arunachal Pradesh. The cuisine of this region is simple, delicious and extremely nutritious. Most of the cooking is done without using any fat, as in this recipe, relying instead on the addition of herbs and spices to give it superb, distinctive flavours.
