A delightful dish from Tripura with definite influences from West Bengal, Shukto is a dish in which different types of vegetables and the roasted mung beans themselves act as the main flavouring agents. Its superb taste belies the simplicity of the spicing and cooking method. Mustard oil is preferred, but other types of cooking oil can be used if liked, though the same flavour profile will not be achieved.
