Meals in Assam usually end with Masor Tenga, a dish made with tomatoes and lime juice along with a flavoursome sprinkling of whole spices. Any firm white-fleshed fish can be used and the selection of spices can be varied. Here, an earthy flavour is imparted by using mustard and nigella seeds. Although fresh tomatoes are more traditional, canned tomatoes have been used here to add a lovely rich colour.
