Most dishes in the tiny state of Tripura are simple yet delicious, with many being cooked in mustard oil, although sunflower oil can be used instead. As rice is the staple in this region, this curry, To Khan, would be enjoyed with boiled rice. The chicken pieces are traditionally cooked on the bone as this adds flavour to the sauce, while the skin and any excess fat is removed prior to cooking.
