While a third of the beautiful state of Meghalaya is forest, there are also large areas with plentiful vegetation that are suitable for raising both cattle and pigs, and as a result pork features heavily on local menus. This hearty dish, Tungrumbai, combines succulent pork shoulder with a few well-chosen spices and some mixed beans to create a flavoursome and sustaining dish.
