Pork and beef are the most popular meats among the various tribes in Nagaland. The Nagas are extremely hospitable and love to welcome their guests with food, often slaughtering a pig for the occasion. In this recipe, Bas Tenga Pura Gahori, the pork is marinated and would then be smoked over a wood fire - using smoked gammon recreates this flavour. The cooking process is simple, but the result unbelievably good.
