This classic dish, Alu-Konir Pitika, can be enjoyed any time of day as a snack, side dish or light meal. It is very easy to make, being a simple combination of mashed potatoes and chopped hard-boiled eggs flavoured with mustard oil, finely chopped shallots, green chilli and fresh coriander leaves.

  • 675 g/ lb potatoes
  • 4 hard-boiled eggs, peeled

  1. Peel the potatoes, cut them into chunks, then boil them in a large pan of salted water for about 10 minutes, until they are soft. Drain well, then mash until smooth.
