These delicious Bengali deep-fried spiced potato cakes, Alur Bora, are traditionally enjoyed at afternoon tea - a legacy left behind by the British tea plantation owners. They are also lovely as an appetizer, and can easily be made in advance.

Ingredients

  • 30 ml/2 tbsp sunflower oil or vegetable oil
  • 2.5 ml/½

Method

  1. Heat the oil in a pan over a medium heat and add the fennel seeds. Allow them to sizzle for a few seconds, then add the onion, chllies and ginger. Fry for 3-4 minutes, until the onions soften. Stir in the turmeric, coriander and salt. Remove from the heat.
