In this recipe, Phoolkopir Fuluri, tender white cauliflower florets are coated in a light gram flour batter, flavoured with aromatic cumin, nigella and fennel seeds, green chillies to add a little heat and turmeric to enrich the colour. They are then deep-fried in hot oil until golden-brown and crisp.
Sift the gram flour into a large mixing bowl and add all the remaining ingredients, except the cauliflower and vegetable oil. Stir everything together to combine, then make a hollow in the middle.
