In this classic dish, Dimer Dalna, hard-boiled eggs and cubed boiled potatoes are flavoured with turmeric and chilli powder, then shallow-fried to a rich golden colour before being simmered in an aromatic sauce. The jade-green peas, golden eggs and potato cubes doused in a rich-red sauce create a strikingly beautiful dish. Luchi are the traditional accompaniment to this curry, but you can use any Indian bread.
