In this recipe, Bhaja Muger Dhal, split yellow gram are stir-fried with onions, chillies and cinnamon, before the cooking liquid is added in several batches. Golden turmeric provides an assertive yet subtle background taste, and heightens the lovely colour of the lentils. As with all dhals, this makes an excellent accompaniment to many vegetable dishes as part of a thali-style feast.
