Indian food and drink are well known for their enticing aroma and captivating flavours. Tea and coffee, flavoured with aromatic herbs and spices, are popular all over the country, although the spicing does vary from one region to another. Elaichi Coffee makes a delicious hot drink during the winter months.

Ingredients

  • 8 green cardamom pods, bruised
  • 600 ml/1 pint/ cups

Method

  1. Put the cardamom pods and the water into a pan and bring to the boil.

  2. Reduce the heat to low, cover the pan and simmer for 5-6 minutes, to allow the flavours to infuse the water.

  3. Add the milk and bring the liquid to th
