This Bengali version, Cha, of the much-loved spiced tea that is drunk all over the country, has the exotic aroma of cardamom, and is rich and fragrant rather than warming - perfect with a mid-morning snack or for afternoon tea. It also makes an excellent alternative to coffee after a meal.

  1. Put the water, tea and cardamom pods into a pan and bring to the boil.

  2. Reduce the heat to low and simmer for 6-8 minutes.
