  • About

Papaya and yogurt make a very healthy combination, and this drink, Papita Lassi, is an ideal way to start the day or revive the body and senses in the afternoon. Rose water adds an exotic touch, but you could omit it or replace it with orange blossom water if you prefer.

  • 1 small ripe papaya
  • 200 g/7 oz/scant 1 cup full-fat (whole) natural (plain) yogurt
  • 45 ml/3 tbsp sugar
  • 250 ml/8fl oz/1 cup water
  • 15 ml/1 tbsp rose water

  1. Cut the papaya in half lengthways, and remove the seeds and the white pith with a teaspoon.

  2. Chop the papaya flesh roughly into small pieces, reserve a few pieces for a garnish and place the rest in a blender or large bowl.

  3. Add the remaining ingredients and process in the blender, or with a stick blender, until smooth. Top with the reserved papaya chunks and serve the drink chilled.
