One Sunday morning, leave your pancake batter in the pantry and bake a batch of these instead. Pure maple syrup sweetens the cookie dough and gives it a lovely rich aroma. Bonus: lots of frosting.
Toast the nuts in a 350°F oven until just starting to turn golden and smell nutty, about 10 minutes. Set aside to cool.
Sift together the flour, baking soda, and salt into a bowl and set it aside.
Cream together the butter and sugar until the mixture looks light and fluffy. Then add the egg and vanilla and mix these in until combined.
