Growing up, we’d refer to these as S cookies in my family. We kids never ate them (“You mean they’re just plain??”), and they were always store-bought rather than freshly made. Slowly but surely our dad would finish out the package over a series of morning cups of tea. Not only are they simple, they keep for weeks, fill you up, and perfectly soak up a warm drink. Now when I bake them in my own house, I’m responsible for finishing the batch. Sometimes it’s so hard being a grownup.
