I fear if it weren’t for their inclusion in the occasional TV recipe (“As a finishing touch, sprinkle some crushed amaretti over the top . . . ”), these cookies would be forgotten. They shouldn’t be! Amaretti are rustic, low-maintenance cousins to the trendy French macaron. But there’s no tedious egg white whipping or perfect piping required—at least not in this version.
