Buy a sack of shredded coconut once, and you’ll always have the ingredients for these cookies on hand. They’re quick and easy and perfect for snacking. My girlfriends and I make them impromptu while watching (embarrassingly bad) TV.

Ingredients

  • 3 cups sweetened coconut flakes
  • 4 egg whites
  • 1 cup sugar

Method

  1. Combine the coconut, egg whites, sugar, and salt in a small saucepan and set over medium-low heat. The ingredients will begin to melt and loosen up at first, but after a few minutes they’ll tighten up again. That’s because some of the moisture is evaporating. Continue to let cook until the batter looks firm enough to hold shape, about 10 minutes total.
