They might look delicate, but these yummy pine nut cookies are entirely forgiving to work with. A careless roll around the nut bowl and they come out beautiful every time.

  1. Sift the sugars, flour, and salt into a bowl and set it aside.
  2. Beat the almond paste on low speed for several minutes until it is broken up into small pea-sized pieces. Give the egg whites a quick whisk, then add half to the bowl and continue mixing.
