Ingredients

  • 1 lb/450 g lobster meat
  • 8 oz/200 g clarified butter
  • Pinch of ground mace
  • Pinch of ground nutmeg
  • Pinch of ground cloves
  • Salt and pepper
  • 3 bay leaves

Method

Use freshly cooked lobster and take out the flesh as whole as possible. Put 2oz/50g clarified butter in an oven-proof dish and put the lobster pieces on top. Add the seasonings and bay leaves and top with 2oz/50g butter. Cover and bake at 325°F/170°C/Gas Mark 3 for 20 minutes. Drain and pack the lobster pieces into a pot. Cool and cover with remaining melted butter. This lobster may be eaten cold or served hot in a sauce.
