Ingredients

  • 1 lb/450 g Cheshire cheese
  • 3 oz/75 g butter
  • 1 teaspoon mustard powder
  • 2 oz/50 g clarified butter

Method

Grate the cheese and mash it with the butter and mustard. Put into small pots and cover with clarified butter. Another version of potted cheese may be made using the same quantities of cheese and butter, but seasoning with a pinch of ground mace and 4 tablespoons dry sherry.
