Gather elderflowers and a few leaves on a dry summer day and spread out in the sun. When dry, remove from stems and store in paper bags or bottles. Use to soothe sore throats by infusing in boiling water (a small handful of mixed flowers and leaves in 1 pint/500ml water). Leave for 6 hours and sweeten with honey if liked.
