Ingredients

  • 1lb/450g dried apricots
  • 3 pints/1.5

Method

Cut the apricots in small pieces with scissors and leave them to soak in the water for 24 hours. Put the fruit and water into a pan and cook gently for 30 minutes. Add the lemon juice, sugar and halved almonds, and stir over low heat until the sugar has dissolved. Boil hard to setting point, pour into hot jars and cover.
