  • 8 oz/225g blackcurrants
  • 8 oz/225g redcurrants
  • 8 oz/225g raspberries
  • 8 oz/225g strawberries
  • 2lb/1 kg sugar


Wash all the fruit and remove stems of blackcurrants and red-currants. Put the blackcurrants into a pan with very little water and simmer until tender. Add the remaining fruit and simmer for 10 minutes. Stir in the sugar over low heat until dissolved. Boil hard to setting point, pour into hot jars and cover.
