Gather gherkins on a dry day and wipe them well. Put in a large bowl and cover with brine. Leave for 3 days and drain off the brine. Cover the gherkins with plain boiling vinegar. Leave for 24 hours, drain off vinegar, reboil it and pour over the gherkins. Repeat the process until the gherkins are bright green. Drain off the vinegar, pack gherkins into small jars and cover with cold spiced vine
