Wipe the tomatoes, and cut across in slices without peeling. Peel and slice the onions thinly. Arrange the tomatoes and onions in a bowl in alternate layers, and sprinkle layers generously with salt. Leave for 24 hours and drain off the liquid completely. Put the sugar and vinegar into a pan and heat gently until the sugar has dissolved. Put in the tomatoes and onions and simmer until soft but
