  • 3lb/1.5 kg eating cherries
  • 8 oz/225g seedless raisins
  • 4 oz/100g soft brown sugar
  • 2 oz/50g honey
  • 2 pint/250 ml vinegar
  • 2 teaspoons ground mixed spice


Chop the cherries and discard the stones. Put all ingredients into a pan, heat gently and stir until the sugar has dissolved. Bring to the boil and boil for 5 minutes. Reduce the heat and simmer for 30 minutes, stirring all the time until thick. Put into hot jars, cover and seal.
