Chop the cherries and discard the stones. Put all ingredients into a pan, heat gently and stir until the sugar has dissolved. Bring to the boil and boil for 5 minutes. Reduce the heat and simmer for 30 minutes, stirring all the time until thick. Put into hot jars, cover and seal.
