  • 1 medium pineapple
  • 8 oz/225g sugar
  • ¼


Peel and core the pineapple and cut flesh in small pieces. Put any pineapple juice with the sugar and vinegar into a pan and bring to the boil. Add the spices and simmer for 5 minutes. Add the pineapple and cook for 10 minutes on low heat, stirring well. Put into hot jars, cover and seal.
