Ingredients

  • 2lb/1 kg green tomatoes
  • 4 oz/100g shallots
  • ½ oz/15g celery seed
  • 1 lemon
  • 2 teaspoons turmeric
  • 1 teaspoon ground allspice
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • 8 oz/225g sugar
  • ½ pint/250 ml vinegar

Method

Cut up the tomatoes and put in a pan with chopped shallots and celery seed. Chop the lemon without peeling and add to the pan. Cover and simmer very gently for 40 minutes until soft. Put through a sieve and return to pan. Add remaining spices, sugar and vinegar, bring to the boil and simmer for 45 minutes until thick and smooth. Put into hot bottles and seal. Sterilize for 30 minutes in a water bath.
