Use tarragon, basil, burnet, marjoram or mint, or a mixture of herbs. Pick them as soon as the flower-buds appear, but before they open. Pack a jar full of leaves and fill with vinegar. Seal and leave for at least 2 weeks. Strain and pour into bottles. Use for salad dressings and mayonnaise.
